Ingredients

  • 225 g self-raising flour
  • 110 g butter cold and diced
  • 75 g caster sugar
  • 50 g currants
  • 1 egg beaten
  • 1 pinch salt
  • 1 dash milk if needed

Instructions 

  1. 1. In a mixing bowl, rub the butter into the flour until it resembles breadcrumbs.
  2. 2. Add the sugar, currants, and a pinch of salt. Mix well.
  3. 3. Add the beaten egg and mix to form a dough. If the dough is too dry, add a dash of milk.
  4. 4. Roll out the dough on a floured surface to about ¼ inch thick. Cut into rounds using a cookie cutter.
  5. 5. Heat a griddle or heavy frying pan over medium heat and cook the cakes for about 3 minutes on each side, until golden brown.
  6. 6. Serve warm, sprinkled with a little extra sugar if desired.
