Ingredients 

Main Ingredients

  • 2 cups Heavy Cream
  • 1 cup Whole Milk
  • ½ cup Thai Tea Leaves
  • ¾ cup Sugar
  • 4 large Egg Yolks

Instructions 

  1. 1. In a saucepan, heat the heavy cream and milk until it starts to simmer. Remove from heat and add Thai tea leaves. Let it steep for 30 minutes.
  2. 2. Strain the mixture to remove the tea leaves and return the liquid to the saucepan. Add sugar and heat until dissolved.
  3. 3. In a separate bowl, whisk the egg yolks. Slowly add the hot cream mixture to the yolks, whisking constantly.
  4. 4. Return the mixture to the saucepan and cook over low heat until it thickens. Do not let it boil.
  5. 5. Chill the mixture in the refrigerator for at least 4 hours.
  6. 6. Churn the mixture in an ice cream maker according to the manufacturer's instructions.
