Ingredients 

Main Ingredients

  • 1 whole Chicken about 3-4 pounds
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Sugar
  • 1 tablespoon Salt
  • 2 tablespoon Black Tea Leaves
  • 1 cup Uncooked Rice
  • 1 cup Brown Sugar
  • 1 cup Wood Chips optional

Instructions 

  1. 1. Rub the chicken with soy sauce, sugar, and salt. Let it marinate for at least 30 minutes.
  2. 2. Line the bottom of a wok with aluminum foil. Spread the tea leaves, rice, brown sugar, and wood chips (if using) over the foil.
  3. 3. Place a steamer rack over the tea mixture. Put the chicken on the rack, breast side up.
  4. 4. Cover the wok with a lid. Turn the heat to high until smoke begins to form, then reduce to medium-low. Smoke the chicken for 20 minutes.
  5. 5. After smoking, transfer the chicken to a preheated oven at 350°F (175°C) and roast for another 40 minutes or until fully cooked.
  6. 6. Let the chicken rest for 10 minutes before carving. Serve and enjoy!
