Russian Tea Cakes Recipe (Snowball Cookies)

- 1 cup butter softened
- 1 cup powdered sugar divided
- 2 cups all-purpose flour
- 1 cup finely chopped nuts walnuts or pecans
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, cream together the butter and ½ cup of the powdered sugar until light and fluffy.
Stir in the vanilla extract.
Gradually add the flour and salt, mixing until just combined. Stir in the chopped nuts.
Roll the dough into 1-inch balls and place them on the prepared baking sheet.
Bake for 12-15 minutes, or until the edges are lightly golden.
Remove from oven and let cool for a few minutes. While still warm, roll the cookies in the remaining powdered sugar. Let cool completely on a cooling rack.
Once cooled, roll the cookies in powdered sugar again for a final coating.
