Ingredients 

Crust

  • ½ cup butter softened
  • 3 oz cream cheese softened
  • 1 cup all-purpose flour

Filling

  • 1 cup pecans finely chopped
  • 1 egg beaten
  • ¾ cup brown sugar packed
  • 1 tablespoon butter melted
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together ½ cup softened butter and 3 oz softened cream cheese until smooth.
  3. Gradually blend in 1 cup of flour. Shape dough into 1-inch balls and press into mini muffin pan to form cups.
  4. In another bowl, mix together 1 cup finely chopped pecans, 1 beaten egg, ¾ cup packed brown sugar, 1 tablespoon melted butter, and 1 teaspoon vanilla extract.
  5. Spoon filling into each dough cup. Bake for 25 minutes or until filling is set.
  6. Cool in pan for 10 minutes, then remove and cool completely on a wire rack.
