Ingredients 

Macaron Shells

  • 1 cup almond flour
  • 1 ¾ cups powdered sugar
  • 3 large egg whites
  • ¼ cup granulated sugar
  • 1 teaspoon matcha powder
  • ½ teaspoon vanilla extract
  • 1 pinch salt
  • as needed green food coloring optional

Filling

  • ½ cup unsalted butter softened
  • 1 cup powdered sugar
  • 1 teaspoon matcha powder

Instructions 

  1. Preheat oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. Sift almond flour and powdered sugar together.
  3. In a bowl, beat egg whites until foamy. Gradually add granulated sugar and beat until stiff peaks form.
  4. Gently fold in almond flour mixture, matcha powder, vanilla extract, and food coloring.
  5. Pipe small circles onto baking sheets. Tap sheets to release air bubbles.
  6. Let sit for 30 minutes to form a skin.
  7. Bake for 15 minutes. Let cool completely.
  8. For filling, beat butter until creamy. Add powdered sugar and matcha powder. Mix until smooth.
  9. Sandwich macarons with filling.
