Ingredients 

Cake Ingredients

  • 1.5 cups All-purpose flour
  • 1 cup Sugar
  • 0.5 cup Butter softened
  • 2 Eggs
  • 1 teaspoon Baking powder
  • 0.5 cup Milk
  • 1 teaspoon Vanilla extract

Lemon Curd Ingredients

  • 0.5 cup Lemon juice freshly squeezed
  • 1 cup Sugar
  • 3 Egg yolks
  • 0.5 cup Butter cut into pieces

Instructions 

  1. Preheat oven to 350°F (175°C). Grease and flour a baking pan.
  2. In a mixing bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk together flour and baking powder. Gradually add to the creamed mixture alternately with milk, beginning and ending with the flour mixture.
  5. Pour batter into the prepared baking pan. Bake for 40 minutes or until a toothpick inserted into the center comes out clean. Let cool.
  6. For the lemon curd, combine lemon juice, sugar, and egg yolks in a saucepan. Cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in butter until melted and smooth.
  7. Once the cake is cool, spread the lemon curd over the top. Serve and enjoy!
