Main Ingredients
- 2 cups Heavy Cream
- 1 cup Whole Milk
- 3 tablespoon Hojicha Powder
- ¾ cup Sugar
- 4 Egg Yolks
1. In a saucepan, heat the milk and heavy cream over medium heat until it starts to steam.
2. Whisk in the hojicha powder until fully dissolved.
3. In a mixing bowl, whisk together the egg yolks and sugar until pale and thick.
4. Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly.
5. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens and coats the back of a spoon.
6. Strain the mixture through a fine-mesh sieve into a clean bowl and let it cool to room temperature.
7. Chill the mixture in the refrigerator for at least 4 hours or overnight.
8. Churn the mixture in an ice cream maker according to the manufacturer's instructions.
9. Transfer the ice cream to a container and freeze until firm, about 2 hours.
