Ingredients 

Main Ingredients

  • 1 cup Mochiko (sweet rice flour)
  • 1 cup Water
  • ¼ cup Sugar
  • 1 tablespoon Matcha powder
  • 1 cup Red bean paste (anko)
  • ½ cup Potato starch (for dusting)

Instructions 

  1. In a microwave-safe bowl, mix mochiko, sugar, and matcha powder.
  2. Add water and stir until smooth.
  3. Cover the bowl with plastic wrap and microwave for 2 minutes.
  4. Stir the mixture with a rubber spatula, then microwave for another 1-2 minutes until the dough is translucent.
  5. Dust a baking sheet with potato starch and transfer the dough onto it.
  6. Divide the dough into 8 pieces and flatten each piece into a circle.
  7. Place a spoonful of red bean paste in the center of each circle and fold the edges over to seal.
  8. Dust the finished mochi with more potato starch to prevent sticking.
