Mochiko (sweet rice flour)

Potato starch (for dusting)
Instructions
In a microwave-safe bowl, mix mochiko, sugar, and matcha powder.
Add water and stir until smooth.
Cover the bowl with plastic wrap and microwave for 2 minutes.
Stir the mixture with a rubber spatula, then microwave for another 1-2 minutes until the dough is translucent.
Dust a baking sheet with potato starch and transfer the dough onto it.
Divide the dough into 8 pieces and flatten each piece into a circle.
Place a spoonful of red bean paste in the center of each circle and fold the edges over to seal.
Dust the finished mochi with more potato starch to prevent sticking.
