Main Ingredients
- 2 cups heavy cream
- ¼ cup granulated sugar
- 2 bags Earl Grey tea
- 1 teaspoon vanilla extract
- 1 packet unflavored gelatin
- 3 tablespoons cold water
In a small bowl, sprinkle the gelatin over the cold water and let it sit for 5-10 minutes to bloom.
In a saucepan, heat the heavy cream and sugar over medium heat until the sugar is dissolved and the cream is hot but not boiling.
Remove from heat and add the Earl Grey tea bags. Let steep for 10 minutes, then remove the tea bags.
Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved. Stir in the vanilla extract.
Strain the mixture through a fine-mesh sieve into a bowl to remove any lumps.
Pour the mixture into ramekins and refrigerate for at least 4 hours, or until set.
To serve, run a knife around the edge of each panna cotta and invert onto a plate, or serve directly in the ramekins.
