Ingredients 

Macaron Shells

  • 100 g almond flour
  • 100 g powdered sugar
  • 2 large egg whites room temperature
  • 50 g granulated sugar
  • 1 teaspoon Earl Grey tea leaves finely ground

Filling

  • 100 g butter softened
  • 150 g powdered sugar
  • 1 tablespoon Earl Grey tea leaves steeped in 1 tablespoon hot water

Instructions 

  1. Preheat oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Sift almond flour and powdered sugar together in a bowl.
  3. In another bowl, beat egg whites until foamy. Gradually add granulated sugar and beat until stiff peaks form.
  4. Fold dry ingredients and ground Earl Grey tea leaves into the egg whites until well combined.
  5. Transfer the batter to a piping bag and pipe small circles onto the prepared baking sheet.
  6. Tap the baking sheet on the counter to release air bubbles. Let sit for 30 minutes to form a skin.
  7. Bake for 15 minutes. Let cool completely.
  8. For the filling, beat butter until creamy. Gradually add powdered sugar and steeped Earl Grey tea until smooth.
  9. Pipe the filling onto one macaron shell and sandwich with another shell.
