Earl Grey Crème Brûlée

Ingredients

  • 2 cups heavy cream
  • 2 bags Earl Grey tea
  • 5 egg yolks
  • ½ cup granulated sugar plus extra for topping
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream over medium heat until it just starts to simmer. Remove from heat and add the Earl Grey tea bags. Let steep for 10 minutes, then remove the tea bags.
  3. In a bowl, whisk together the egg yolks and ½ cup of sugar until well combined. Gradually whisk in the warm cream mixture and vanilla extract.
  4. Pour the mixture into ramekins. Place the ramekins in a baking dish and fill the dish with hot water until it reaches halfway up the sides of the ramekins.
  5. Bake for 40-45 minutes, or until the custards are set but still slightly jiggly in the center. Remove from the oven and let cool to room temperature, then refrigerate for at least 2 hours.
  6. Before serving, sprinkle a thin layer of sugar on top of each custard. Use a blowtorch to caramelize the sugar until it forms a crispy, golden crust. Serve immediately.
