Instructions
1. Heat the heavy cream, whole milk, and sugar in a saucepan over medium heat until it begins to steam.
2. Remove from heat and add the chai tea bags. Let steep for 10 minutes, then remove the tea bags.
3. In a separate bowl, whisk the egg yolks. Slowly pour the warm cream mixture into the yolks, whisking constantly.
4. Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon.
5. Remove from heat and stir in the vanilla extract. Let the mixture cool to room temperature, then refrigerate until completely chilled.
6. Churn the mixture in an ice cream maker according to the manufacturer's instructions. Transfer to a container and freeze until firm.
