Main Ingredients
- 1 cup dried apricots chopped
- 1 cup boiling water
- 2 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 large egg beaten
- 1 tablespoon butter melted
Preheat your oven to 350°F (175°C). Grease a loaf pan.
Place chopped apricots in a bowl and pour boiling water over them. Let sit for 10 minutes.
In a mixing bowl, combine flour, sugar, baking powder, baking soda, and salt.
Add the beaten egg and melted butter to the apricot mixture. Stir well.
Pour the wet ingredients into the dry ingredients. Mix until just combined.
Pour the batter into the prepared loaf pan. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
